Pesto di Prezemolo

Ingredients:
  • olive oil - 1 cup
  • parsley leaves - 1 cup dried
  • capers - 2/3 cup
  • oregano - 1 tbsp.Spoon
  • white wine vinegar - 1 tbsp.Spoon
  • red chilies - 1/2 teaspoon (crushed)
  • anchovy fillets in oil - 2 pieces (oil drain)
  • Garlic - 2 cloves
  • salt and pepper - - To taste
instructions carefully

chop in a food processor: olive oil, capers, oregano, white wine vinegar, chili pepper, anchovy fillets and garlic.The sauce should have a smooth paste-like appearance.Season the pesto with salt and pepper to taste.
