Mexican bean paste

  • spotted beans - 2 1/2 cups
  • of water - 1.3 liters
  • onion - 1 Each
  • red pepper flakes - 1/2 Art.spoon
  • paprika - 1/2 Art.spoon
  • light brown sugar - 2 tbsp.
  • spoon of salt - 4 tbsp.spoon

1. If possible, soak the beans overnight.This will reduce the time of its preparation.If this is not possible - do not worry, follow the instructions below.Rinse beans.Add the beans in a saucepan and cover with water.Water exceed beans at least 7.5-10 cm. 2. Cooking beans 2 1/2 hours and about 1 1/2 hours, pre-soaked beans.When the bean is ready, drain, reserving 1 cup of water.3. Set aside the beans aside.4. In a frying pan fry the chopped onion, red pepper flakes, paprika and brown sugar for 5 minutes.5. Add to the pan with the beans, along with a glass of the reserved liquid.6. Using an immersion blender, mix the beans slightly.7. If you do not have an immersion blender, you can use a potato masher.8. Salt beans as needed.You can also add more red pepper flakes if you like.Serve

immediately.Cooked pasta can be decorated with cilantro, green onions or cheese.
