Cake with prunes and panna Kotoy

Ingredients:
  • For the dough: ginger cookies - 20 pieces
  • walnuts -
  • 3/4 cup light brown sugar - 1 tbsp.
  • spoon of salt - 1/2 teaspoon
  • butter, melted and cooled - 3 tbsp.spoon
  • For filling: Gelatin - 1 1/2 teaspoons
  • heavy cream - 1/2 cup honey
  • - 3 tbsp.spoon
  • salt - 1/2 teaspoon
  • Greek yogurt (2 percent fat) - 1 3/4 cups
  • vanilla extract - 3/4 teaspoon
  • prunes - 1 1/2 cups
  • light brown sugar- 1/4 cup
  • wide strips of orange peel - 5 pieces

Make the dough.Preheat oven to 160 degrees.In a food processor mix cookies, nuts, sugar and salt.While the processor running, slowly pour the oil.Beat until mixture becomes to resemble wet sand.Put the dough in the baking pan.Bake until golden brown, about 25 minutes.Give cool completely in the mold.Prepare the filling.In a small bowl, pour the gelatin 3 tablespoons of cold water and let stand for 5 minutes.In a small saucepan mix the cream, honey and 1/4 teaspoon salt, bring to a boil over medium heat.Pour the gelatin and stir until

completely dissolved.In a large bowl, whisk the yogurt and vanilla.Add cream mixture and whisk to mix.Pour the filling on the dough chilled.Refrigerate for 2 hours or up to 2 days, tightly wrapped.Meanwhile in a small saucepan combine the plums, sugar, orange zest, 1/2 teaspoon salt and 1/2 cup water.Bring to a boil and cook until plums are tender and the liquid is thick, 20 minutes.Allow to cool.Before serving, pour the mixture over the cake.
