Cream soup with mushrooms and celery

Ingredients:
  • olive oil - 3 tbsp.spoon
  • carrots - 1 Each
  • celery stalk - 1 Each
  • garlic - 1 tbsp.Spoon
  • ceps - 450 Gram
  • white wine - 120 grams
  • tomato juice - 120 grams
  • chicken soup - 120 grams
  • whipping cream - 450 milliliters
  • Parmesan cheese - 1 cup cornstarch
  • - 1 tspSpoon
  • water - 1/4 cup
  • salt - 1 pinch of pepper

1. Finely chop carrots and celery.Heat the olive oil in a large saucepan over medium heat.Clean the porcini mushrooms and cut into thin slices.Add chopped carrots and celery in a pan, stir.Then add the chopped garlic and stir.2. Add the porcini mushrooms in a pan and fry until they soften.Pour the white wine and cook for a few minutes.3. Add the tomato juice and chicken broth.Give the soup simmer for about 5 minutes.4. Then add the heavy cream and bring the soup to a boil.5. Grate the Parmesan cheese and add to the pot of soup.Cook a few minutes until the cheese has melted.6. Mix the cornstarch and 1/4 cup of water, pour the mixture into

the soup.Reduce the heat and simmer the soup to simmer for about 10 minutes until thick.Season with salt and pepper soup on your own taste.Serve the soup with French bread or crackers.
