Cheesecake with cherry jam

  • flour - 1 3/4 cups
  • sugar - 1/2 cup
  • salt - 1/4 teaspoon
  • stick chilled butter - 1 1/2 pieces (12 tablespoons)
  • large egg yolks - 2 pieces
  • vanilla extract - 1 teaspoon
  • thick cherry jam - 1/3 cup (stuffing)
  • cream cheese, room temperature - 270 grams (stuffing)
  • granulated cottage cheese, room temperature -240 grams (stuffing)
  • sugar - 3/4 cup (stuffing)
  • salt - 1/4 teaspoon (stuffing)
  • ground cinnamon - 1 pinch (stuffing)
  • nutmeg - 1 pinch (stuffing)
  • large eggs, room temperature - 2 pieces (stuffing)
  • powdered sugar, for sprinkling - to taste (optional)

1. Grease split a diameter of 22 cm with oil and sprinkle with flour, shake off excess.Put the form on a baking sheet lined with parchment or a silicone mat.Cut the butter into small pieces.Mix the flour, sugar and salt in a food processor.Add pieces of butter and stir until the consistency of crumbs.Add egg yolks and vanilla extract and mix until smooth.Put the dough on the work surface.Form dough ball,

wrap it in plastic wrap, and refrigerate 20 minutes.Put the dough into the prepared pan, forming a skirting around the edges of a length of 3.5 cm. Put in the fridge for at least 30 minutes.2. Preheat oven to 190 degrees.Grease a sheet of aluminum foil with oil, cover with foil shape with the dough (oiled side).Pour on top of rice or beans.Bake in oven for 20 minutes, then remove the foil from rice or beans and bake for 5 minutes.Put on a rack to cool.Reduce the oven temperature to 175 degrees.Make stuffing.Stir jam and lubricate them warm crust.3.
